Re-structured directory layout, removed unused modules, added metrics, no major code changes. Map is still broken and some syncs still fail. This is the foundation for later fixes. Squashed into one big commit to because I accidentally commited secrets

Refactor of directory structure and implementation of Grafana/Loki for logging and metrics. Removes unused modules and seeks to make the overall project more understandable.
