proto encoding encodes a newline into the file

investigate proto encoding as a newline gets encoded. Not sure what is going on here but we don't like it.

the problem is here

                proto.encode(&mut buf).unwrap();
                String::from_utf8(buf).unwrap()

we are converting the beautiful bytes into a string 🤦‍♂️
